Spicy Indian Pancakes (Besan ka Puda)

As it is Pancake Day today, I thought I would take part in the festivities and cook some spicy Indian pancakes (or Puda as we call them in Hindi) using my Mum’s special recipe. They’re made from gram flour which is the same flour used to make onion bhajis/pakoras. I love using gram flour-it has a delicious, nutty flavour and it’s also gluten free. My ma told me that whilst growing up in India, my Grandma used to make these pancakes and serve them with hot cardamom tea whenever anyone in the house had a cold. They’re sometimes served at breakfast too with hot mango pickle and yoghurt. The batter is very simple to make and only uses a few ingredients so try them out and spice up your Pancake Day!

Makes 4

What we need:
8 tbsp gram flour
1tsp salt (or to taste)
Pinch paprika
1/2tsp ground coriander powder
1 green chilli, chopped (optional)
1 small onion, finely chopped
Handful fresh coriander
Cup of water
3tsp olive oil

How we do:
-In a bowl add all of the ingredients together apart from the water and oil
-Slowly add some water, mixing it with a whisk at the same time until a batter forms that is the same consistency as pancake batter
– Heat a non stick pan (medium heat)
-Using a small ladle, pour the batter onto the pan. Tilt the pan quickly to spread the batter evenly. It should be about 7 inches wide and even in thickness
-When the batter starts to dry, add 1 tsp oil and spread over the pancake. Using a flat spatula, begin to lift one side of the pancake. Then when it turns slightly golden in colour, flip it to the other side
-Now press down all over the pancake with the spatula so it cooks evenly
-Serve hot with mango pickle and yoghurt
